Zucchini chowder
No seafood? No problem! This wonderful, smokey soup made with zucchinis, potatoes & corn will delight your tastebuds, and warm you in the middle of winter.

Ingredients
- 20g neutral oil
- 150g chopped onion
- 5g crushed garlic
- 750 mL water
- 250 mL soy milk
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 5 tsp veggie broth powder
- 600g chopped potatoes
- 500g shredded zucchini
- 290g frozen corn
Instructions
- Heat oil in a large pot and fry onion for a few minutes to tenderise it.
- Add potatoes + garlic, and keep frying over medium heat for a few minutes.
- Add water, spices, bring to medium/low heat and let everything simmer until the potatoes are nearly done.
- Add ~1/2 of the shredded zucchini and stir.
- Keep on low simmer until potatoes feel completely done, add soy milk, and blend everything with an immersion blender.
- Add frozen corn and the remaining ~1/2 of the shredded zucchini, and keep it simmering for just a few minutes (don't overcook it)
- Serve with crackers.
