Zalu soba
This is a special creation from the Vegeterrien book of La Cuisine de Bernard, that features soba noodles (naturally gluten-free!) served cold with a spicy peanut sauce. It is simply to die for!
Ingredients
- 300g soba noodles
- 165g smooth peanut butter
- 1 tsp toasted sesame oil
- 80g mirin
- 35g soy sauce
- 10g raw sugar
- 15g Dijon mustard
- 10g Gochujang chili paste
- 150 mL water
- Optional toppings: toasted sesame seeds, shredded nori sheets, chives
Instructions
- Boil the soba in a saucepan for 5-10 min. They cook very quickly, so make sure you don't turn them to mush!
- Drain them, and immediately run them under cold water to stop the cooking.
- Mix all sauce ingredients together, and pour over the soba. Generously coat them in the sauce.
- Optional: top with toasted sesame seeds, nori, etc. and enjoy!
