Super seed chocolate protein bars
I love a quick snack after the gym that I know is going to meet my macronutrient needs, and doesn't cost both my wallet, and the planet with plastic packaging. It is also a great way to consume protein powder without having to gulp down disguting shakes that are sometimes difficult to digest. I make these protein bars regularly and grab one whenever I am feeling peckish. I simply modulate the size of the bars to my hunger level.

Ingredients
- 6g coconut oil (virgin or refined)
- 50g dark chocolate
- 25g pumpkin seeds
- 21g sunflower seeds
- 24g chia seeds
- 33g sesame seeds
- 24g linseeds
- 40g soy milk
- 40g maple syrup
- 1/2 tsp vanilla extract
- 40g vegan protein powder
Instructions
- Line a small square or rectangular dish with baking paper.
- Put vegan protein powder in a mixing bowl.
- Toast the sesame seeds in a small pan until they are golden, making sure not to burn them. Add to the mixing bowl.
- In the same pan, toast very briefly the chia seeds, pumpkin seeds, sunflower seeds, and linseeds. Add to the mixing bowl.
- In a double boiler, melt the chocolate with the coconut oil and maple syrup.
- Add the soy milk and vanilla extract to the melted chocolate, and mix well.
- Add to the mixing bowl with the dry ingredients, and mix well.
- Spread the mixture onto the baking paper, and even the level with a spatula.
- Refrigerate until set, and cut into bars of desired length.
- Keep in an airtight container in the fridge, and enjoy!
