Rice with green peas & almonds
This rice dish turns the boring side rice you usually order with your curry, into a luscious, complex dish with great texture and flavour. It goes beautifully with any lean dal.
Ingredients
- 180g white rice
- 4 cardamom pods, slightly bruised
- 4 cloves
- 1/2 tsp salt
- 1/4 tsp turmeric
- 45g slivered almonds
- 20g margarine
- 135g fresh or frozen peas
Instructions
- Wash rice thoroughly under running water until water comes out clear. Drain and reserve.
- Heat up margarine in a pan over medium heat, and fry the almonds until they get slightly golden.
- Add the cardamom pods, cloves and drained rice to the pan. Fry and stir the ingredients in the margarine for a few minutes.
- Add salt and turmeric, and stir again.
- Add water and peas, cover with a lid and turn down heat.
- Let it cook until rice is done, and turn off heat completely. Let it sit for a while.
- Fluff up the rice and serve with a lean dal.
