Ranch dressing
Ranch dressing is a savory, creamy American salad dressing traditionally made from buttermilk, salt, garlic, onion, mustard, herbs (commonly chives, parsley and dill), and spices (commonly pepper, paprika and ground mustard seed). This vegan version substitutes buttermilk for soy milk mixed with a bit of vinegar, and adds blended cashews to make it deliciously creamy. It goes well on any kind of salad, and even on top of a pizza!

Ingredients
- 60g raw cashews, soaked for > 4h
- 160 mL soy milk
- 1/2 tsp salt
- 9g olive oil
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 3/4 tsp onion powder
- 6g nutritional yeast
- 10g apple cider vinegar
- 1/2 tsp dried parsley
- 1/2 tsp dried thyme
- 1/4 tsp dried dill
- 1 tsp dried chives
Instructions
- Put all ingredients in a jar, with the exception of the chives.
- Blend with an immersion blender.
- Add the dried chives, cover with a lid, and shake well.
