Pearl barley stew
Here is a soup that is quick to make, healthy, and whose flavour will surprise you! By using smoked tofu instead of the traditional "lardons" (bacon cubes in French cuisine), the broth becomes instantly very flavorful and you barely need to add any stock. Give it a try, and don't forget to pair it with a slice of good bread!
Ingredients
- 120g carrots, chopped
- 300g potatoes, chopped
- 90g leeks, chopped
- a few leaves of cabbage (any type)
- 200g smoked tofu, cubed small
- 12g oil
- 2 tsp veggie broth powder (or to taste)
- 1/4 tsp black pepper
- 100g pearl barley
Instructions
- Heat up oil in a pot, and fry smoked tofu for a few minutes, until they get a little golden.
- Add the other vegetables, and fry for another few minutes.
- Add veggie broth, salt & pepper to taste, and cover with boiling water.
- Let it simmer until vegetables are ~75% done.
- Add pearl barley, and keep simmering until pearl barley is cooked through. Remember to stir from time to time.
- Serve hot, with a slice of good bread.
