Recipe taken from Vegan Richa.

  • Ingredients

    • 200g nut butter (almond, hazelnut, peanut, cashew...)
    • 120g flour (plain flour, or a mix of plain flour with spelt/oat/wholegrain, or gluten-free flour)
    • 1 tbsp (8g) flaxseed meal
    • 90g soy milk
    • 80g brown sugar (or coconut sugar, or raw sugar)
    • 30g maple syrup
    • 1/4 tsp bicarb soda
    • 1/4 tsp cinnamon powder
    • 2 tsps vanilla extract
    • 90g chocolate chips
  • Instructions

    1. Preheat the oven at 180ÂșC, fan on.
    2. In a small bowl, mix together the flaxseed meal and 2 tbsps of the soy milk. Let it sit, it will come together as a "flaxseed egg".
    3. In another bowl, whisk together the sugar with the nut butter.
    4. Add the soy milk, flaxseed egg, vanilla extract and stir.
    5. Add the flour, bicard soda and cinammon powder, and mix together in a dough.
    6. Add chocolate chips.
    7. Oil a small brownie oven dish and transfer the dough to the dish. Flatten the surface with a spatula.
    8. Bake for ~10-15 min depending on your oven (do not overcook it! Blondies should be soft)
