Nut butter blondies with chocolate chips
Brownies & blondies are known for their high butter content, but replace it with nut butter, and you have a vegan version that comes together in a few minutes and satisfies all those cravings for a fudgy, sweet treat. Experiment with any kind of nut butter you like: almond, hazelnut, peanut, cashew... The possibilities are endless!

Ingredients
- 200g nut butter (almond, hazelnut, peanut, cashew...)
- 120g flour (plain flour, or a mix of plain flour with spelt/oat/wholegrain, or gluten-free flour)
- 1 tbsp (8g) flaxseed meal
- 90g soy milk
- 80g brown sugar (or coconut sugar, or raw sugar)
- 30g maple syrup
- 1/4 tsp bicarb soda
- 1/4 tsp cinnamon powder
- 2 tsps vanilla extract
- 90g chocolate chips
Instructions
- Preheat the oven at 180ÂșC, fan on.
- In a small bowl, mix together the flaxseed meal and 2 tbsps of the soy milk. Let it sit, it will come together as a "flaxseed egg".
- In another bowl, whisk together the sugar with the nut butter.
- Add the soy milk, flaxseed egg, vanilla extract and stir.
- Add the flour, bicard soda and cinammon powder, and mix together in a dough.
- Add chocolate chips.
- Oil a small brownie oven dish and transfer the dough to the dish. Flatten the surface with a spatula.
- Bake for ~10-15 min depending on your oven (do not overcook it! Blondies should be soft)
