Lentil quinoa loaf with green beans
Ever wondered how you could eat something as hearty as a meatloaf but vegan? Look no further! This wonderful, moist loaf with a spicy, smokey glaze and a side of green beans, will delight your tastebuds.
Recipe inspired from Vegan Richa.
Ingredients
- Lentil-quinoa loaf
- 50g brown or green lentils, rinsed and drained
- 60g quinoa, rinsed and drained
- 1 dried bay leaf
- 2 tsp oil (9g)
- 90g chopped onion
- 12g crushed garlic
- Optional (if you like heat): 1 small jalapeno, chopped
- 40g grated zucchini
- 60g grated carrots
- 1/2 thyme
- 1/2 tsp oregano
- 20g raisins
- 15g flaxseed meal
- 17g vegan Worcestershire sauce
- 35-40g ketchup
- 25g soy sauce
- 30g tahini
- 9g nutritional yeast
- 40g breadcrumbs
- Glaze
- 60g barbecue sauce
- 5g hot sauce (sriracha, sambal oelek, tabasco...)
- 10g maple syrup
- 5g vegan Worcestershire sauce
- Green beans
- 300g green beans, fresh or frozen
- 15g margarine
Instructions
- Lentil-quinoa loaf
- Cook lentils with the bay leaf, drain and reserve.
- Cook quinoa with the same bay leaf, and add to the cooked lentils.
- In a bowl, mix together the soy sauce, tahini, ketchup, and Worcestershire sauce.
- Heat up oil in a pan over medium heat and fry onion until it gets a bit tender.
- Add carrots + zucchini (and optional jalapeno), and keep cooking until everything is nearly done.
- Add crushed garlic and keep cooking for another ~2-3 min.
- Add herbs, salt and raisins, and mix.
- Add the sauces and mix. Reduce heat, cover with a lid and let it simmer for a few minutes.
- Remove lid, add ground flaxseed and nutritional yeast, and mix.
- Add cooked lentils & quinoa, and mix.
- Add breadcrumbs and mix.
- Heat up oven at 180°C (traditional oven).
- Grease an oven dish (I brush with oil), and pour the mixture in it. Flatten with a spatula so it is even everywhere.
- Mix together all ingredients in a small bowl.
- Pour the glaze over the loaf in the oven dish, and spread evenly.
- Cook the loaf for ~15-20 min. It doesn't need to cook for long as all ingredients are already cooked. Overcooking will lead to a dry loaf, so less is better for this recipe.
- Green beans
- While the loaf is in the oven, cook the green beans in a large pot of boiling water, but make sure there is a little bit of a bite left in the green beans (don't overcook them!). Drain them.
- In a large pan, melt margarine over high heat.
- Fry green beans until they start to become a bit golden. Remove from the pan.
- Season with salt & pepper to taste.
- Serve the loaf with a side of green beans.
