Kale, edamame and avocado salad
I discovered this recipe recently, as I was wondering what I was going to do with a huge bunch of kale I got on special. One of my favourite food blog (La Cuisine de Bernard) proposed this intriguing combination and I loved it! This recipe is packed with protein, fiber, greens, and it is so tasty I could almost eat it without the delicious dressing that goes with it.

Ingredients
- Salad
- 150g kale leaves, cut into strips
- 100g edamame
- 100g avocado cubes
- 40g pecan nuts, roughly chopped
- Dressing
- 18g tahini
- 1/4 tsp garlic powder
- 6g agave syrup
- 6g balsamic vinegar
- 36g olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Salad
- Boil the edamame to cook them, drain, run under cold water to cool them down, and place in a large salad bowl.
- Add the chopped kale, avocado, pecan nuts, and mix well.
- Dressing
- Place al ingredients into a small jar, close with a lid, and shake well.
- Pour over the salad as you eat, and enjoy!
