Focaccia (fougasse)
This delicious Italian flatbread is enriched in olive oil, and can feature filling in its French version (fougasse), most notably olives.

Ingredients
- 250g (strong) wheat flour
- 1 tsp (5g) instant yeast
- 150 mL warm water
- 12g olive oil
- 1/2 tsp salt
- handful of pitted black olives (optional)
Instructions

Mix flour with salt in a large bowl.

In another bowl, mix olive oil, water, and yeast. Mix well and let the yeast activate for ~15 min.

Mix everything together (+ olives, optional) and knead until the dough feels elastic and separates easily from the fingers.

Let dough rise in a warm place until it doubles in size.

Punch the dough down and shape it into an oval.

Turn on the oven at 180°C fan on. The focaccia will rise a little while the oven is heating up.

Slash the bread diagonally with a sharp knife, brush with olive oil, and bake for ~15-20 min.

Let it cool down on a rack, and serve with your favourite Mediterranean dishes!
