Dan dan noodles
Dan Dan noodles are the Chinese equivalent to the Zalu soba, and feature thick wheat noodles coated in a sesame-peanut creamy sauce. Simple and quick to make, and it never disappoints!
Recipe inspired from the Vegeterrien book of La Cuisine de Bernard.
Ingredients
- Sauce
- 80g tahini
- 70g smooth peanut butter
- 10g soy sauce
- 240 mL water
- 25g Gochujang chili paste
- 10g brown sugar
- Other
- 270g wheat noodles (preferably thick)
- Toppings (optional): coarsely chopped roasted peanuts, toasted sesame seeds
Instructions
- Sauce
- Combine all ingredients in a small saucepan, and heat up over medium heat, stirring constantly. The sauce will thicken very quickly, so pay attention!
- Turn off heat and reserve.
- Noodles
- Cook noodles according to package instructions, and drain.
- Divide noodles in individual serving bowls, pour the sauce on top, and coat generously.
- Top with coarsely chopped peanuts or toasted sesame seeds for additional crunch.
- Enjoy!
