Creamy chipotle aioli

For the lovers of all things smokey, spicy and garlicky. This is the perfect starter to a Mexican dinner party! Pair with sweet potato fries, corn chips, crackers...

Recipe inspired from the Cooking with Kindness Cookbook.

  • Ingredients

    • 200g cashews
    • 40g neutral oil (canola, sunflower)
    • 60g lime juice
    • 9g crushed garlic
    • 30g chipotle peppers in adobo sauce
    • 30g brown sugar
    • 10g salt
    • 2 tsp smoked paprika
    • 100g cold water
  • Instructions

    1. Soak cashews for > 8h so they get very soft and will be easy to blend into a smooth dip.
    2. Drain the cashews and add all other ingredients.
    3. Blend until very smooth, and serve with corn chips, bread, or spread on burgers and sandwiches.
