Creamy chipotle aioli

Ingredients
- 200g cashews
- 40g neutral oil (canola, sunflower)
- 60g lime juice
- 9g crushed garlic
- 30g chipotle peppers in adobo sauce
- 30g brown sugar
- 10g salt
- 2 tsp smoked paprika
- 100g cold water
Instructions
- Soak cashews for > 8h so they get very soft and will be easy to blend into a smooth dip.
- Drain the cashews and add all other ingredients.
- Blend until very smooth, and serve with corn chips, bread, or spread on burgers and sandwiches.
