Chinese almond cookies

These traditional Chinese cookies are deceptively simple, yet so satisfying. When it is teatime, dip a cookie in your favourite hot beverage and let the buttery, almond biscuit melt in your mouth. These biscuits are very similar to French "sablés", but with some almond meal in them.

  • Ingredients

    • 160g wheat flour
    • 15g almond meal
    • 75g cane sugar
    • 115g good quality margarine
    • one almond to top each cookie (~15g)
  • Instructions

    1. Preheat the oven at 180°C (fan on).
    2. In a bowl, mix together the flour, almond meal, and cane sugar.
    3. Add the margarine cut into small cubes, and mix with your hands to make a sort of "sand".
    4. Add a splash of water to hold the dough together, but don't knead for too long.
    5. Divide the dough into equal balls, and flatten them on a baking paper with the palm of your hand.
    6. Press an almond in the middle of each cookie, and bake for ~10-15 min, or until the edges of the cookies start to get golden (it highly depends on your oven).
    7. Take them out of the oven, and let them cool down for a bit before handling them. They are so rich in margarine that they will break if you try to handle them hot.
    8. Transfer them on a grid to cool down completely, and store in an air-tight container, until there is none left!
