Banana French toast
Egg-free pain perdu (French toast) has never been easier and tastier with a bit of mashed banana! I found the perfect batter recipe for French toast thanks to Vegan Richa, who puts a little bit of nutmeg and vanilla to yield a perfect flavour profile. I like this recipe a lot with wholemeal, stale sandwich bread, but you can use whatever type of stale bread you want!

Ingredients
- Batter
- 110g very ripe banana
- 120 mL plant-based milk (I use soy)
- 32g maple syrup
- 25g wheat flour
- 1/4 tsp nutmeg
- 1/2 tsp vanilla extract
- Other
- ~200g stale bread slices (you don't want to pick a bread that is too dry, but just a day or two old)
- toppings: peanut butter & jelly, other jams, maple syrup, fresh fruits...
Instructions
- In a tall jar, put all ingredients and blend with an immersion blender.
- Pour batter in a shallow dish that is roughly the size of your bread slices, and soak them one by one.
- Heat up a non-stick pan over high heat while the slices are soaking, and slightly brush the pan with oil.
- Pick up the slices and remove excess batter by running your fingers in all sides and edges.
- Fry the slices in the pan for a few minutes on each side, until nice and golden.
- Serve with your favourite toppings!
